These compounds are essential for normal growth and development and can be specific for a given plant species or cultivar. Secondary phytochemicals such as polyphenols and flavanoids provide human nutritional and health benefits. Phytochemicals associated with flavor and aroma play a significant yet currently unquantified psychological role in human mental health.
